I, like many people in isolation, am guilty of baking way more than usual. Like, WAY MORE. Like, I never really baked until now!
I tried stress baking banana bread and cakes, but really hit the sweet spot with chocolate chip cookies. I found this super simple recipe on Taste.com.au and then made a few tweaks.
In one version I replaced plain flour with self raising and switched out some of the chocolate chips for nuts. It was a nice balance to have some almonds with the dark chocolate.
In another attempt I use about 30grams less butter and instead added a few spoonfuls of crunchy peanut butter to the mix. I love peanut butter so I was a big fan of this!
The recipe is very easy to alter to your own taste and kind of foolproof.
